TASTING NOTES

A new season and a new vintage of our fresh Ladybird rosé. This popular wine is produced from a combination of our young vineyards and some bought in fruit from other respected organic producers. It is a fun wine and the blend has become a “cellar” secret. Vintage 2020 was as good as it gets. Perfect, slow ripening conditions and moderate temperatures during harvest produced healthy, concentrated grapes.

We pick the Rosé grapes like we would for a white wine. We do not “bleed” full ripe reds to get Rosé juice because then you usually end up with too high alcohol. This should be a fun wine, not only to make but also to drink. We believe Ros¬¬é is a summer wine and therefore freshness and drinkability are at the forefront of our goals when we start out. All fruit is handpicked early in the morning. We destem, gently crush and then it goes immediately into a press and start draining. No skin contact is allowed to get a very light, refreshing colour. Press juice is treated reductively to preserve freshness and we do not add acid. A selected enzyme is use to clear the juice for 24 hours. All this is done with no oxygen contact. Clear juice is carefully racked and inoculated with a selected yeast strain for a slow cold fermentation. The finished wine will spend 1 month on the primary sediment before it is bottled.

Lovely light strawberry colour. Fantastic expressive nose with oodles of passion fruit, black currant and fresh cut grass. The palate is juicy and fresh with a great balance of fruit and acid. Medium bodied with enough structure to compliment some exotic dishes. Please enjoy this as much as we enjoyed making it.
