TASTING NOTES

A new season and a new vintage of our fresh Ladybird rosé. This popular wine is produced from a combination of our young vineyards and some bought in fruit from other respected organic producers. It is a fun wine and the blend has become a “cellar” secret. Vintage 2020 was as good as it gets. Perfect, slow ripening conditions and moderate temperatures during harvest produced healthy, concentrated grapes.

Hemisphere summer we proudly bring you our fun filled Rose 2021 wine.
With the category of Dry Rose wines growing by the day we really enjoy
making this wine. We are looking for something crisp, light, low alcohol and
refreshing. We do not use the technique of “bleeding” off some juice from over
irrigated, over cropped and chemical manipulated picked grapes. All grapes
are grown organically, and everything is handpicked earlier. It is a small
bottling and quality is more important than quantity. Quite strange for a SA
Rose wine.
After picking we destem, crush and gently move the mash to our small press
for a short skin contact. After pressing we allow a 24 hour cold settling with
the use of enzymes. Reductive racking follows and a selective Organic yeast is
added. No finings, or the use of any phosphates or ammonium for yeast food is
done. We like to keep things natural. Fermentations are usually around 2
weeks and are done around 16 degrees to keep the freshness of the wine. A 2
– 3 months lees contact after fermentation is done to add to the mouthfeel and
complexity.
Lovely light pink, rose like colour. On the nose some peach, exotic fruit and
perfume. A crisp, fresh juicy palate with a wonderful array of rose petal,
candy floss and litchi. Great acidity and a well balanced lingering dry palate.
A great summer drink but with enough body to complement summer dishes.
