TASTING NOTES

A new release of our basic Chenin Blanc. This wine is made from our younger blocks of Chenin on the farm. We try to create something modern with good fruit, freshness but also some old-world charm. We usually start picking Chenin around the second week of February. The 2 young blocks for this wine borders Kanonkop and Warwick. Grapes are handpicked early in the morning, crushed and then some cold skin contact is given. Usually this will last 24 hours. Only the free run juice is used for our Ladybird Chenin, the pressed juice is kept separately and blended into a part of our Chenin Sur Lie that spends time in barrel. Remember we do not use any finnings, so this decision is important. We use enzymes to settle and after around 24 hours we rack and inoculate the juice with selective yeast for a slow colder fermentation than usual. We try to leave the finished wine for around 3 months on the primary dead yeast after fermentation to add some extra dimensions.

Light, fresh colour. Aromatics of pineapple, green apple and white peach. Quite exotics nose with an array of wonderful fresh flavours. The palate is vibrant with and explosion of fruit and a fresh, lingering, almost juicy acidity. It is a quaffable wine but actually complexed enough to complement light summer dishes. Enjoy.
