TASTING NOTES

We proudly present our new release of Ladybird Chenin Blanc. This is the
first vintage that we use 100% Laibach fruit from our younger organic Chenin
Blanc vineyards. Like you know we also have a big brother for this wine called
the Sur Lie. There is quite a difference stylistically though and I must say this
wine caters for a completely different customer.
Grapes are all handpicked and destemmed. We do 24 hours skin contact and
then drain with gravity. We do add enzymes for a clean settling and after 24
hours will rack reductively (without oxygen) from the lees. We inoculate with
a selected organic yeast and ferment around 18 degrees for 10 to 14 days. We
do not use any fining or yeast food in our processes. We leave the fermented
wine on the natural sediment for 3 – 4 months to add to the mouthfeel and
complexity of the wine. 10% Concrete egg fermented wine is blended in, to
add to the structure. The wine is then bottled under screwcap.
Lovely light fresh colour. Aromas of white nectarine, green apple and
pineapple. The palate is fresh, medium bodied, with a good explosion of fruit
and a magical lingering acidity. A wine perfect for everyday drinking, but
with some complexity to complement some summer dishes. Perfect with
pasta, seafood and blue cheese salad. Enjoy 1 – 3 years after harvest.
