A new vintage of our premium Simonsberg – Stellenbosch red blend. Named after our original founder, Friedrich Laibach, this will be the 7 th vintage that we will release in the last 15 years. Made only in some fantastic vintages, this small batch reserve is made to please the people looking for something classic. Production for this bottling was less than 14 barrels and the wine is a blend of the best barrels of the specific vintage. The oldest block of Cabernet always plays apart in the final blend adding depth, length and structure. The vintage 2014 was a softer more elegant vintage and therefore the wine is already quite approachable. Like all our grapes and vineyards on the farm we believe in minimum intervention. All the grapes are farmed organically with no pesticides, insecticides or chemical fertilizers used. No irrigation is also used and we are one of the last wineries in South – Africa to have old vineyards without irrigation. We believe in our “terroir” and our unique soil and we want to express this in our wine. All grapes are handpicked and destemmed. A very strict sorting regime after destemming but before crushing is used at around 1 ton per hour. Attention to detail for us is not negotiable and every bunch is looked after with care. Fermentation is done natural and we like peak temperatures at around 30 degrees. Pressing after 10–12 days and the best batches will go into special barrels for ageing. Out of this, a very limited amount is selected and carefully blended to produce this wine. The wine is bottled with a sterile filtration 14–16 months after the vintage. Deep dark red colour. On the nose oodles of fruit with some cassis, spice, bitter chocolate and toast evident. A complex, medium bodied wine with good structure, depth and primary aromas. The expensive oak is still evident but is well balanced with lots of juicy red and black fruit. Great length and complexity with enough character to age gracefully. Enjoy 2016–2020.
